Had a ceramic one, better but nowhere near as easy. I’ve bought the gas one today, bring it on.....

For me, a charcoal BBQ is what gives you the true smokey BBQ flavour, a gas BBQ is “just cooking outside” very sociable and convenient, but you can’t beat charcoal.

You can get a decent smoke flavour on a gas bbq. A pellet tube is one way and considerably more effective than wood chips in a foil pouch. They’re also quite good for temperature control. That said, I can’t remember the last time I used our gas bbq. It must be four or five years at least.

Interestingly, since I’ve bought the big offset which uses wood only, I’ve noticed a big difference in the quality of smoke flavour compared to using wood chips/pellets/chunks with charcoal. The quality of the charcoal makes a huge difference too. A lot of the cheaper rubbish has a strong chemical smell when burning. Coco shell briquettes are very good as long as you add some wood chips or chunks for smoke. They burn really hot and last well. Best I’ve tried in those are the Pro Q brand, who also make excellent smokers.

Thank god for that , i was exteremely worried about you for a while , but you do know about the carcinogens associated with charcoal dont you ,

Yep, but in this world you can’t avoid them, so best embrace them ;)

We've always had charcoals bbqs before, but the smoker on this one does provide a delicious, well, smokiness. Besides, gas is so easy, and not having to dodge the smoke has definite upsides. This one’s getting far more use than any predecessor.

I would have thought famine, wars and general poverty but cooking with wood, who's have thunk it.

I thought that was more from the smoke of the cooking fires due to poor ventilation? But not really something I've studied!

And this is the thing. We use our Weber basically every day. You get an element of grill flavour due to the intense temperature, and the fat vapourising on the bars.

PS have you got that BT thermometer yet? :D

It’s the truth. Also high rates of cancer in unventilated Asian kitchens with lots of high-temperature frying going on. Outdoor cooking on gas, baby, it’s the healthy alternative to death.
